  7. Boil 1 quart of milk (skim is probably not a good idea).  Let cool 'til
  8. your pinky can stand the heat for a count of 11, or to a temp of 130F.
  9. Mix a little of the milk w/ 3 - 4 Tbsp of yogurt. Stir in quickly. Let
  10. stand covered w/ a plate and a towel in an earthenware bowl overnight
  11. or for 8 hours. Strain through cheese-cloth for a thicker result (often
  12. called yogurt cheese)
